Every spin is its own coin flip — the wheel has no memory of the last one. So in a short run the experimental fraction wanders: ten spins of a fair wheel might give seven gold, or two.
The law of large numbers says that as the number of trials grows, that experimental fraction is pulled toward the exact probability — the dashed gold line. It does not "even out" to correct past luck; the early swings are simply drowned out by the flood of later trials.
Watch the horizontal axis: it counts trials on a log scale, so the wild left edge is just a handful of spins and the calm right edge is thousands. The line settles — it never promises to hit the target exactly, only to close in.
Set a rare event (drag the gold slice down to about one-sixth) and it still converges — it just needs many more trials to get there.
